I’ve never been a person who liked taking pictures of my food (it’s meant to be eaten not to be looked at). But I’m really doing well with this challenge, so I want to keep up with it. So here it goes:

Breakfast:

  • Fried egg (white only)
  • Pieces of Ham
  • Strawberries
  • Banana
  • English Muffin with Strawberry Jam
  • Of course, a cup of tea.

Lunch:

  • Fresh Mozzarella Sandwich with lettuce, tomato, and pesto (I’m really proud of this one because I made the pesto sauce myself!)
  • Cherry flavor Greek yogurt
  • Ginger Ale

Dinner:

  • Corn Souffle
    • It’s very good! Here is the recipe:
      • 2 lightly beaten eggs
      • 1 cup of sour cream
      • 1 package of Jiffy cornbread mix
      • 2 cans of cream style corn (Some recipes will say I can of cream style corn and 1 whole kernel corn but you cream style to give it a more creamier, sweeter taste)
      • 1/2 cup of melted butter (you don’t have to use that much. I use very little and it tastes fine)
  • Chicken Breast
  • Cauliflower
  • Half a glass of homemade fruit punch

Of course, I ended the night with a cup of tea.
